They are one piece high carbon steel with a full tang for strength and durability. A special heat treat process hardens the blades to 55-57HRC for longer edge life. A smooth notched finger groove sits on top of the blade for your pointer finger to rest, offering better control and comfort. Put your thumb in the groove and use as a prep knife for pealing skin or fat from meat.
